Breakfast is tough.

At least, breakfast is tough for anyone trying to limit their intake of processed carbohydrates, and if that’s not you then it should be.

In much of the Western world, breakfast is a massive carb-fest.  Weather it’s packaged cereal, toast, bagels, oatmeal or pancakes it’s carbs that take centre stage.  And starting the day off with a huge blast of carbs sends your blood sugar sky high and hits the “GO” switch on the blood sugar rollercoaster you spend the rest of the day riding.

But if we remove the toast and muffins and bagels and cereal, what’s left??  Lots!

This is probably my top choice for breakfast.  This is what I have most days and I love that it gets greens into my body first thing in the morning.  There are about a billion green smoothie recipes out there but this is my favourite.

 

 

granola2. Grain-Free Granola

Homemade granola is a great way to sneak lots of nutrient-dense nuts and seeds into your day from the get-go.  Most granolas are oat-based but it’s also easy to go against the grain (horrible pun intended) and make a granola that is grain-free.  I haven’t tried this one from Everyday Maven, but it looks delicious.  Feel free to play around with the nuts and seeds included to make it fit your taste (just make sure they’re all raw).

leftovers3. Leftovers for Breakfast

I can’t say that I’m a huge fan of leftovers for breakfast personally, but that’s totally a personal thing because, nutritionaly speaking, having something like leftover vegetables stir fry or lentil soup is a great option for breakfast. 

 

 

omlette4. Vegetable Omlette

I’m a fan of anything that gets vegetables into breakfast and a veggie omlette is a great way to do that.  Take 2-3 organic eggs and combine them with a few of you favourite veggies.  Broccoli, carrots, spinach, peppers, mushrooms, onions and asparagus are just a few ideas.

Sometimes you just have to have pancakes.  It’s the truth.  Try these ones from the Real Food Enthusiast. Resist the urge to drown these in maple syrup.  They already have lovely sweet blueberries and a bit of honey or maple syrup in the batter – that’s enough!
