I have big news!

Finally, after two and a half years of going to school part-time and juggling studying with a full time job and busy family life, I got the call this week that I passed my final exam and am now officially a Registered Holistic Nutritionist!!

I’m so thrilled to have reached this milestone.  And I don’t mind saying that I’m pretty proud of myself for making it happen.

But what I’m even more excited about is that now I’ll be able to pour all my energy into building my business, expanding the blog and creating new programs, courses and classes for you!

I already have something in the works which I will be launching in the fall that is going to help you get quick, healthy meals on the table that you and your family will actually eat.

I promise it’s going to be a game changer for you.

Salty Peanut Butter Chocolate Balls

Ingredients (approx 20 balls)

  • 1 cup raw almonds, chopped or briefly ground in a blender so they are still large enough to be crunchy
  • 1/2 cup almond flour or almond meal
  • 1 cup natural peanut butter (peanuts only, no added sugar, salt or oil)
  • 2 tbsp coconut oil
  • 3 tbsp maple syrup
  • 1/4 tsp sea salt
  • 1 tbsp raw cacao for coating (some fine the cacao too bitter so, if you want a sweeter treat, grate up some dark chocolate and use that to roll the balls in instead)

Instructions

In a large bowl combine the chopped almonds, almond flour and sea salt and combine.

Add the peanut butter, maple syrup and coconut oil and stir until well combined.

Using your hands, form the mixture into approx 1 inch balls.

On a dinner plate, sprinkle the raw cacao or grated dark chocolate.

Roll each ball in the chocolate and place on another plate.

Refrigerate for a few hours before eating.

Store in the fridge.
