I don’t know about you, but I’m not feeling the tank tops and flip flops just yet.

And I’m not the least bit surprised.

On March 21 everyone else is always shocked that there’s still snow outside, but not me.

My birthday is April 7 and on the day I was born there was a massive snowstorm – white out conditions, closed roads, “Snowmageddon” before we had 24 hour news stations to come up with such creative and witty branding.  We lived way out in the country in between Shelburne and Dundalk, Ontario, and when my mom went into labour in the middle of this storm, there was no way my dad could get the car from our house on the backroads out to the highway to make it to the hospital.

My dad called the doctor, “I’m going to have to deliver this baby at home. You’re going to have to walk me through it.”

“Um, that’s not going to work,” said the doctor.  “The baby is breech so your wife is going to need a C-section.  If she doesn’t get to a hosptial they’re both going to die.”

Well, he probably phrased it in a less ominous and terrifying way, but that’s the way the story has evolved in our family.

So, with the help of some wonderful neighbours from the farm next door, and a snowmobile or tractor or bulldozer or something (again, the story has been told so many times in my family that I’ve sort of glazed over on the details), they managed to get my mom out to the highway where she was met by the local police who got them to the hospital in time for the doctor to deliver me by C-section.

And ever since that year there is always a big storm around my birthday. Always.

So, it’s not over yet folks.

Anyway, after making you sit through the story of my dramatic entrance into the world, I think I at least owe you an amazing chili recipe, right?

This Two Bean Chipotle Vegan Chili is my favourite.  It’s adapted from the amazing Angela over at Oh She Glows and I make it many, many times each winter.

And since I know that we still have at least two more weeks of this nonsense, I know that I’ll be making at least one more batch of this before I start looking for daffodils.

Enjoy!
